That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make harira

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Thickened with tadouira

75 minutes · serves 6 · Medium

What you need

  • 150g brown lentils
  • 1 tin chickpeas
  • 2 onions, grated
  • 3 celery sticks, chopped fine
  • 1 tin chopped tomatoes
  • 2 tbsp tomato purée
  • 1 tsp turmeric
  • 1 tsp ginger
  • 1 tsp cinnamon
  • Large bunch coriander and parsley
  • 3 tbsp plain flour
  • 100ml water
  • Lemon
  • Dates, to serve

What you do

  1. 1Soften the onion and celery in oil with all the spices for 8 minutes.
  2. 2Tomatoes, purée, lentils and 1.5 litres water. Simmer 35 minutes.
  3. 3Chickpeas and most of the herbs in. Another 15 minutes.
  4. 4Whisk the flour into the cold water until completely smooth — this is the tadouira.
  5. 5Pour it into the simmering soup in a thin stream, stirring the whole time, and cook 10 minutes more until it turns velvety.
  6. 6Lemon juice and the rest of the herbs at the end. A date on the side, which is not optional in Ramadan and is a good idea anyway.
