How to make momos

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Steamed, with the tomato dip

75 minutes ยท serves 4 ยท Medium

What you need

  • 400g plain flour
  • 220ml water
  • 400g chicken or pork mince
  • 1 onion, very finely chopped
  • Thumb of ginger
  • 4 garlic cloves
  • 2 spring onions
  • 1 tsp Sichuan pepper
  • 4 tomatoes
  • 4 dried chillies
  • 1 tbsp sesame seeds

What you do

  1. 1Work the flour and water into a firm dough and rest it 30 minutes under a bowl.
  2. 2Mix the filling: the onion must be chopped small enough to disappear, or the pleats will not close.
  3. 3Roll discs thin at the edge and thicker in the middle. Fill, and pleat round in a circle into a purse.
  4. 4Steam in an oiled basket 12 minutes.
  5. 5For the achar: char the tomatoes and chillies under a grill until blistered, then blitz with toasted sesame, garlic and salt.
