Panna cotta

It should wobble. If it does not, it has set too hard.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make panna cotta

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

It should wobble

20 minutes · serves 4 · Medium

What you need

  • 500ml double cream
  • 100ml milk
  • 60g sugar
  • 1 vanilla pod
  • 2 sheets gelatine

What you do

  1. 1Soak the gelatine in cold water for 5 minutes until it goes floppy.
  2. 2Warm the cream, milk, sugar and split vanilla pod to just below a simmer. Do not boil it.
  3. 3Off the heat, squeeze the gelatine out and stir it in until it has completely gone.
  4. 4Strain into moulds and chill at least 4 hours. Two sheets is deliberately the minimum — more sets it firm, and firm panna cotta is a bad panna cotta.
  5. 5Dip the moulds in hot water for 3 seconds to turn out.

Coconut, no dairy

20 minutes · serves 4 · Easy

What you need

  • 400ml coconut milk
  • 200ml coconut cream
  • 60g sugar
  • 2 tsp agar agar
  • Lime zest

What you do

  1. 1Whisk the agar into the cold coconut milk, then bring to the boil for 2 minutes — agar needs boiling, unlike gelatine.
  2. 2Sugar, cream and zest in, then poured into moulds.
  3. 3Sets at room temperature in an hour. Firmer than the dairy one, by nature.
