Piri piri chicken

Spatchcocked, charred, and basted with more chilli than is sensible.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make piri piri chicken

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Spatchcocked and basted

70 minutes Β· serves 4 Β· Medium

What you need

  • 1 chicken, spatchcocked
  • 8 birds eye chillies
  • 6 garlic cloves
  • 2 red peppers, roasted
  • 100ml red wine vinegar
  • 1 tbsp smoked paprika
  • 1 lemon
  • 100ml olive oil
  • 1 tsp oregano

What you do

  1. 1Blitz everything but the chicken into a loose sauce. Keep back a third for the table β€” basting sauce that has touched raw chicken does not come back.
  2. 2Slash the chicken through the thickest parts and marinate in the rest, at least 4 hours.
  3. 3Roast at 200C for 40 minutes, then finish under a hot grill or on coals for 10, basting twice.
  4. 4Rest 10 minutes, cut through the joints, and put the reserved sauce on the table.
