Stuffed and griddled

What you need

  • 400g masa harina
  • 500ml warm water
  • 200g mozzarella or queso, grated
  • 200g refried beans
  • Oil

What you do

  1. 1Mix the masa and water to a soft dough like plasticine. Rest 10 minutes.
  2. 2Roll golf balls, press a hollow in each, fill with cheese and beans, then close the dough over and flatten gently to a disc.
  3. 3Dry griddle on medium for 4 minutes a side until freckled and puffed.
  4. 4Serve with something sharp and pickled β€” curtido if you have it, vinegary slaw if you do not.
