How to make risotto

Creamy without cream

What you need

  • 180g arborio rice
  • 1 litre hot stock
  • 1 shallot, minced
  • 100ml white wine
  • 40g butter
  • 40g parmesan
  • Olive oil

What you do

  1. 1Soften the shallot in oil without colouring it. Add the rice and toast 2 minutes until the edges go translucent.
  2. 2Wine in, let it vanish.
  3. 3Add hot stock a ladle at a time, stirring, waiting for each to be almost gone before the next. About 18 minutes.
  4. 4Taste for bite. It should be loose enough to spread slowly on a tilted plate.
  5. 5Off the heat, beat in the cold butter and the parmesan hard. That is where the creaminess comes from.
