How to make sausage roll

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

From a block of pastry

45 minutes Β· serves 6 Β· Easy

What you need

  • 500g puff pastry
  • 500g good sausagemeat
  • 1 onion, grated
  • 1 tsp sage
  • 1 tsp fennel seeds
  • 1 egg, beaten

What you do

  1. 1Squeeze the grated onion dry in a cloth and mix it into the meat with the herbs and plenty of pepper.
  2. 2Roll the pastry into two long rectangles. Pipe or spoon the meat in a line down each.
  3. 3Brush one edge with egg, roll over, seal seam-side down, and press with a fork.
  4. 4Chill 20 minutes β€” warm pastry will not puff.
  5. 5Cut into lengths, slash the tops, egg wash, and bake at 200C for 25 minutes.
