That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make shrimp and grits

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Low country

45 minutes Β· serves 4 Β· Easy

What you need

  • 200g stone-ground grits
  • 600ml water
  • 300ml milk
  • 60g butter
  • 100g sharp cheddar, grated
  • 500g large prawns, peeled
  • 150g bacon, chopped
  • 3 spring onions
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • Hot sauce

What you do

  1. 1Whisk the grits into the boiling water and milk, then turn it right down.
  2. 2Forty minutes, stirring every five. Quick grits take ten and taste like it.
  3. 3Butter and cheese in at the end. They should pour slowly, not hold a shape.
  4. 4Fry the bacon until crisp and lift out. Cook the prawns in the fat, 90 seconds a side, with the garlic.
  5. 5Spring onion, lemon and a splash of water off the heat to make a pan sauce.
  6. 6Grits in wide bowls, prawns and bacon on top, sauce over, hot sauce at the table.

Polenta instead

30 minutes Β· serves 3 Β· Very easy

What you need

  • Quick polenta
  • Milk
  • Butter
  • Cheddar
  • Prawns
  • Bacon
  • Garlic
  • Lemon

What you do

  1. 1Polenta in 8 minutes with milk and butter.
  2. 2Same prawns. Not grits, and close enough to be worth doing on a Tuesday.
