Skyr with berries

Thick, sour, and gone in six spoonfuls.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make skyr with berries

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

As it comes

5 minutes · serves 1 · Very easy

What you need

  • 200g skyr
  • 100g mixed berries
  • 1 tbsp honey
  • 1 tbsp toasted oats or nuts

What you do

  1. 1Skyr straight from the pot into a bowl. It is thicker than yoghurt and should stand up on its own.
  2. 2Crush half the berries with a fork and a little honey to make a rough sauce.
  3. 3Swirl that through, keeping streaks rather than mixing it pink.
  4. 4Whole berries and something toasted on top, for the crunch.

Layered, made ahead

10 minutes · serves 2 · Very easy

What you need

  • 400g skyr
  • Berries
  • Granola
  • Honey
  • Lemon zest

What you do

  1. 1Layer skyr, berries and granola in two jars.
  2. 2Honey and lemon zest on top, fridge overnight. The granola softens, which is either the point or the problem depending on who you ask.
