That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make eton mess

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Five minutes

10 minutes Β· serves 4 Β· Very easy

What you need

  • 400g strawberries
  • 300ml double cream
  • 4 meringue nests
  • 1 tbsp icing sugar
  • 1 lemon

What you do

  1. 1Crush a third of the strawberries with the icing sugar and a squeeze of lemon to make a rough sauce. Leave it 10 minutes to go syrupy.
  2. 2Chop the rest.
  3. 3Whip the cream to soft peaks β€” it must not be stiff or the mess will not fold.
  4. 4Break the meringue in by hand, in uneven pieces, then fold everything together twice only. Two folds. It should be streaked, not pink.
