Still warm, edges crisp, middle not quite set.

How to make cookies

One way to do it. The same ones the app hands you once you have decided.

Brown butter, chilled dough

45 minutes Β· serves 12 Β· Medium

What you need

  • 150g butter
  • 150g brown sugar
  • 80g caster sugar
  • 1 egg plus 1 yolk
  • 250g plain flour
  • 1 tsp bicarb
  • 200g dark chocolate, chopped

What you do

  1. 1Brown the butter until it smells nutty and the solids go amber. Cool 10 minutes.
  2. 2Beat in both sugars, then the egg and yolk, until glossy.
  3. 3Fold in flour, bicarb, salt and chocolate. Chill the dough at least 30 minutes β€” this is not optional.
  4. 4Bake at 180C for 10–12 minutes. Pull them while the centres still look underdone.
