What you need

  • 600g cream cheese, room temperature
  • 200g caster sugar
  • 4 eggs
  • 300ml double cream
  • 25g plain flour
  • Pinch of salt

What you do

  1. 1Heat the oven as high as it will go, around 220C. Line a tin with baking paper, crumpled, letting it stick up over the sides.
  2. 2Beat the cream cheese and sugar smooth, then the eggs one at a time, then the cream, then the flour. Do not whip air into it.
  3. 3Pour in and bake 40 minutes. The top should go properly dark โ€” further than instinct allows โ€” and the middle should still wobble.
  4. 4Cool completely in the tin. It sinks and cracks. That is what it looks like.
