That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make yakitori

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Over coals, with tare

45 minutes Β· serves 4 Β· Medium

What you need

  • 800g chicken thighs, in 3cm pieces
  • 6 spring onions, in lengths
  • 150ml soy sauce
  • 3 tbsp sugar
  • 2 tbsp honey
  • Thumb of ginger
  • 2 garlic cloves
  • Bamboo skewers, soaked

What you do

  1. 1Tare: simmer the soy, sugar, honey, smashed ginger and garlic until it thickens enough to coat a spoon, 12 minutes. Strain it.
  2. 2Thread chicken and spring onion alternately, packed tight so they baste each other.
  3. 3Grill over hot coals or under a fierce grill, turning every minute, for 8 minutes β€” with no sauce on yet. Sugar burns.
  4. 4Now brush with tare and give it 3 more minutes, turning and brushing twice.
  5. 5A last brush as they come off. Shichimi at the table.
