That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make asado

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Slowly, over wood

300 minutes ยท serves 8 ยท Medium

What you need

  • 1 rack of beef short ribs (tira de asado)
  • 1kg flank or skirt
  • 4 chorizo sausages
  • Coarse salt
  • 1 bunch parsley
  • 4 garlic cloves
  • 2 tbsp oregano
  • 100ml red wine vinegar
  • 150ml oil

What you do

  1. 1Build the fire with hardwood and let it burn down to embers. Rake embers under the grill โ€” never flames.
  2. 2Salt the beef heavily half an hour before it goes on.
  3. 3Ribs bone-side down first, high above the coals, for two hours. Do not touch them.
  4. 4Turn once, lower the grill, another 40 minutes. The chorizo and flank go on for the last 20.
  5. 5Chop the parsley, garlic and oregano and mix with the vinegar, oil and salt for the chimichurri.
  6. 6Rest everything 10 minutes, carve on a board, chimichurri on the side, not on top.
