That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make bbq ribs

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Low and slow in the oven

240 minutes ยท serves 4 ยท Easy

What you need

  • 2 racks pork ribs
  • 3 tbsp brown sugar
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp mustard powder
  • Cayenne
  • 300ml barbecue sauce
  • Cider vinegar

What you do

  1. 1Pull the membrane off the back of the racks โ€” get a corner up with a knife and grip it with kitchen paper. Leave it on and no rub gets through.
  2. 2Rub the dry mix in all over and rest them in the fridge for a few hours.
  3. 3Wrap tightly in foil with a splash of vinegar and bake at 140C for 3 hours. The foil steams them tender.
  4. 4Open the foil, brush with sauce, and give them 25 minutes at 200C, brushing twice more.
  5. 5They are ready when the meat pulls back from the bone ends and a bone twists free. Rest 10 minutes.

Boiled first, grilled after

  2. 2Drain, dry, sauce them, and grill or barbecue 15 minutes, turning and brushing.
  3. 3Purists will tell you off. It works on a weeknight.
