That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make bandeja paisa

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

The whole tray

60 minutes · serves 4 · Medium

What you need

  • 400g cooked red beans with their liquor
  • 400g minced pork
  • 4 chorizo
  • 4 pieces pork belly for chicharrón
  • 4 eggs
  • 400g cooked white rice
  • 2 plantains, sliced
  • 2 avocados
  • 4 arepas

What you do

  1. 1Score the pork belly skin, salt it, and roast at 200C for 45 minutes until it blisters and crackles.
  2. 2Simmer the beans with a little of the pork fat until thick.
  3. 3Brown the mince with onion and cumin. Grill the chorizo.
  4. 4Fry the plantain slices until dark at the edges. Fry the eggs last.
  5. 5Everything on one plate, nothing touching if you can manage it, avocado and an arepa on the side.
  6. 6There is no polite way to serve this and no polite amount of it.
