That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make carbonara

One way to do it. The same ones the app hands you once you have decided.

Four ingredients, no cream

20 minutes Β· serves 2 Β· Easy

What you need

  • 200g spaghetti
  • 100g guanciale or pancetta, cubed
  • 2 eggs plus 1 yolk
  • 50g pecorino, grated
  • Black pepper, lots

What you do

  1. 1Render the guanciale slowly in a cold dry pan until the fat runs and the edges crisp.
  2. 2Boil the pasta. Beat the eggs with the pecorino and a great deal of pepper.
  3. 3Drag the drained pasta into the pan of fat, off the heat. Wait thirty seconds β€” this is the step everyone skips.
  4. 4Pour in the egg mixture and toss hard, adding splashes of pasta water until it turns glossy.
  5. 5If it scrambles, the pan was too hot. Nothing to do but eat it and go again.
