That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make beef stroganoff

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Twenty minutes, properly

25 minutes ยท serves 4 ยท Easy

What you need

  • 600g beef fillet or sirloin, in strips
  • 300g mushrooms
  • 2 onions
  • 2 tbsp flour
  • 300ml beef stock
  • 250ml soured cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 40g butter

What you do

  1. 1Get the pan very hot and sear the beef in two batches, 60 seconds a batch. Lift it out immediately โ€” it finishes later and overcooked strips are the usual failure.
  2. 2Mushrooms in, hard, until browned and dry. Then the onion, softened.
  3. 3Flour and paprika in for 2 minutes, then the stock gradually.
  4. 4Soured cream and mustard off the heat. Off the heat, or it splits.
  5. 5Beef and any resting juices back in for 60 seconds only. Rice, pasta or mash.
