A cheese toastie that went to finishing school.

How to make croque monsieur

The grown-up toastie

What you need

  • 4 slices of good white bread
  • 4 slices of ham
  • 100g gruyère, grated
  • 20g butter, 20g flour, 250ml milk
  • Dijon mustard
  • Nutmeg

What you do

  1. 1Make a small thick béchamel and season it with mustard and a scrape of nutmeg.
  2. 2Butter the bread on the outside. Inside: a smear of sauce, ham, some cheese.
  3. 3Fry both sides in a pan until deep gold.
  4. 4Move to a tray, blanket the tops with the rest of the sauce and cheese, and grill until it blisters.
