That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make galbi

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Marinated in pear

240 minutes ยท serves 4 ยท Easy

What you need

  • 1.2kg beef short ribs, flanken cut
  • 1 Asian pear, grated
  • 1 onion, grated
  • 6 tbsp soy sauce
  • 3 tbsp sugar
  • 2 tbsp sesame oil
  • 5 garlic cloves, grated
  • 1 tbsp grated ginger
  • Black pepper
  • Spring onions
  • Lettuce leaves

What you do

  1. 1Rinse the ribs in cold water for 20 minutes to draw out the blood, then pat them very dry.
  2. 2Mix everything else into a marinade. The pear is doing real work here โ€” it tenderises, so do not go past 6 hours.
  3. 3Marinate 4 hours in the fridge, turning once.
  4. 4Grill over high heat, 2โ€“3 minutes a side. They are thin; they want char, not time.
  5. 5Cut between the bones with scissors at the table. Eat wrapped in lettuce with rice and ssamjang.

Under the grill

200 minutes ยท serves 3 ยท Very easy

What you need

  • 800g short ribs
  • Pear
  • Soy sauce
  • Sugar
  • Garlic
  • Sesame oil

What you do

  1. 1Same marinade, 3 hours.
  2. 2Grill on the top shelf, 4 minutes a side, watching. The sugar burns quickly.
