Ayran

Salted yoghurt, whisked and cold. Strange once, then necessary.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make ayran

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Whisked and salted

3 minutes Β· serves 2 Β· Very easy

What you need

  • 300g plain yoghurt
  • 300ml cold water
  • 1/2 tsp salt
  • Ice
  • Dried mint, optional

What you do

  1. 1Whisk the yoghurt and salt together first, alone, until completely smooth.
  2. 2Add the cold water gradually, still whisking. Doing it the other way round leaves lumps of yoghurt floating about.
  3. 3Whisk hard for another 20 seconds to get a head of foam on it β€” the foam is the difference between ayran and salty milk.
  4. 4Over ice, with dried mint if you like.

In a blender

2 minutes Β· serves 2 Β· Very easy

What you need

  • 300g yoghurt
  • 300ml cold water
  • Salt
  • Ice

What you do

  1. 1Everything in, 20 seconds on high.
  2. 2Pour straight away while the foam is still on it.
