That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make breakfast burrito

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Wrapped and griddled

25 minutes · serves 2 · Easy

What you need

  • 4 eggs
  • 2 large tortillas
  • 1 potato, diced small
  • 60g cheddar, grated
  • 1/2 onion
  • Hot sauce
  • Oil

What you do

  1. 1Fry the diced potato with the onion until crisp and cooked through, 12 minutes. Do this first; everything else is quick.
  2. 2Scramble the eggs slowly, off the heat at the last moment — they carry on cooking in the wrap.
  3. 3Warm the tortillas so they fold without cracking.
  4. 4Fill in a line just below the middle: potato, egg, cheese, hot sauce. Fold the sides in first, then roll tight.
  5. 5Griddle seam-side down for 2 minutes to seal it.

Made ahead, frozen

40 minutes · serves 6 · Easy

What you need

  • 8 eggs
  • 6 tortillas
  • Potato, onion, pepper
  • Cheese
  • Foil

What you do

  1. 1Cook the filling and let it cool completely — warm filling steams and goes soggy.
  2. 2Wrap each burrito in foil and freeze.
  3. 3From frozen: 25 minutes at 190C, still in the foil, opened for the last 5.
