How to make causa

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Pressed in layers

60 minutes Β· serves 4 Β· Medium

What you need

  • 1kg yellow potatoes
  • 3 tbsp aji amarillo paste
  • 3 tbsp lime juice
  • 4 tbsp oil
  • 2 avocados, sliced
  • 1 tomato, sliced
  • 2 hard-boiled eggs
  • Salt
  • Olives

What you do

  1. 1Boil and peel the potatoes, then rice or mash them while hot and leave to cool completely.
  2. 2Work in the chilli paste, lime, oil and a lot of salt. It should be smooth, bright yellow and stiff enough to hold a shape.
  3. 3Line a tin or a ring with cling film. Half the potato in, pressed flat.
  4. 4Avocado and tomato over it, seasoned, then the rest of the potato on top, pressed down hard.
  5. 5An hour in the fridge. Turn out, slice like a cake, egg and olives on top.
