Kimbap

Rolled, sliced, packed for somewhere else. Not sushi, and nobody there thinks it is.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make kimbap

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

The standard roll

45 minutes Β· serves 3 Β· Medium

What you need

  • 400g short grain rice, cooked and cooled a little
  • 1 tbsp sesame oil
  • 1 tsp salt
  • 4 sheets nori
  • 2 eggs
  • 1 carrot, in matchsticks
  • 1 bunch spinach
  • 4 strips yellow pickled radish
  • 4 strips of burdock or cucumber
  • Sesame seeds

What you do

  1. 1Season the warm rice with the sesame oil and salt and spread it out to cool to body temperature.
  2. 2Make a flat omelette and cut it into long strips. Fry the carrot briefly in oil. Blanch and squeeze the spinach, then dress it with a little sesame oil and salt.
  3. 3Lay a nori sheet shiny side down and spread rice over three quarters of it, thin, leaving the far edge bare.
  4. 4Lay the fillings in a line a third of the way up. Roll tightly with the mat, pressing as you go.
  5. 5Brush the roll with sesame oil and scatter seeds. Wipe the knife between every cut or it will drag.
  6. 6Cut thick. It travels better than it keeps.

Vegetable only, for a lunchbox
