Doubles

Trinidad street food: curried chickpeas between two soft fried breads.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

Free, no sign-up, and an answer in about twenty seconds.

How to make doubles

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Bara and channa

90 minutes Β· serves 6 Β· Medium

What you need

  • 300g plain flour
  • 1 tsp yeast
  • 1/2 tsp turmeric
  • 1 tsp sugar
  • 200ml warm water
  • 2 tins chickpeas
  • 1 onion
  • 4 garlic cloves
  • 2 tbsp curry powder
  • 1 tsp cumin
  • Oil for frying
  • Tamarind and pepper sauce

What you do

  1. 1Bara dough: flour, yeast, turmeric, sugar, salt and water, kneaded soft and left to rise 1 hour.
  2. 2Channa: fry the onion, garlic, curry powder and cumin, then the chickpeas with 300ml water. Simmer 30 minutes and mash a third of them so it thickens.
  3. 3Pinch small balls of dough, flatten them thin between oiled palms, and fry 30 seconds a side in shallow oil. They puff, then settle.
  4. 4Two bara per serving β€” that is the name β€” with channa spooned between, tamarind over and pepper sauce if you dare.
  5. 5Eaten standing up, over the paper, with both hands.
