From dried chickpeas, properly
40 minutes · serves 4 · Medium
What you need
- 250g dried chickpeas, soaked overnight
- 1 onion
- 4 garlic cloves
- Big handful parsley and coriander
- 2 tsp cumin
- 1 tsp baking powder
- Flatbreads, tahini, pickles
What you do
- 1Use soaked, never tinned or cooked chickpeas — tinned turns to paste and falls apart.
- 2Blitz everything to a coarse rubble, not a purée. Chill 30 minutes.
- 3Stir in the baking powder just before shaping into small patties.
- 4Shallow fry 3 minutes a side until deep brown.
- 5Wrap with tahini thinned with lemon and water, plus pickles for sharpness.
