How to make hoppers

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Fermented overnight

40 minutes · serves 4 · Hard

What you need

  • 250g rice flour
  • 1 tin coconut milk
  • 1 tsp yeast
  • 1 tsp sugar
  • 100ml warm water
  • 4 eggs
  • Salt

What you do

  1. 1Whisk the yeast and sugar into the warm water and leave it 10 minutes until it foams.
  2. 2Beat in the rice flour and coconut milk to a thin batter, thinner than pancake batter, and leave it somewhere warm 8 hours.
  3. 3Get a small bowl-shaped pan very hot. Pour in a ladleful and immediately swirl the pan so the batter climbs the sides.
  4. 4Lid on, 3 minutes. The middle stays soft and the rim goes lacy and crisp.
  5. 5For an egg hopper, crack one into the middle at the start and cover until it sets.
