That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make kitfo

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Warmed, not cooked

25 minutes ยท serves 3 ยท Medium

What you need

  • 500g very fresh lean beef, minced twice or hand-chopped
  • 80g niter kibbeh (spiced clarified butter)
  • 2 tbsp mitmita
  • 0.5 tsp ground cardamom
  • Salt
  • 200g ayib or cottage cheese
  • Cooked greens
  • Injera

What you do

  1. 1Buy the beef from somebody you trust and use it the day you buy it. This matters more than anything else here.
  2. 2Melt the niter kibbeh gently until warm, not hot.
  3. 3Work the mitmita, cardamom and salt into the meat with your hands.
  4. 4Pour the warm butter over and mix until the meat is glossy and barely warmed through โ€” it should still be red.
  5. 5Serve at once with the cheese and greens beside it, and injera underneath.
  6. 6Ask for it leb leb if you want it briefly warmed in the pan instead.
