Lahmacun

Thin as paper, folded round salad and lemon. Not a pizza, whatever anyone says.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make lahmacun

One way to do it. The same ones the app hands you once you have decided.

Thin as paper

45 minutes Β· serves 4 Β· Medium

What you need

  • 300g strong flour
  • 180ml warm water
  • 1 tsp yeast
  • 250g lamb mince
  • 1 onion
  • 1 pepper
  • 2 tomatoes
  • 1 tbsp pepper paste
  • Parsley
  • 2 lemons

What you do

  1. 1Make a soft dough and leave it an hour. It wants to be slack, not tight.
  2. 2Blitz onion, pepper and tomato to a paste, squeeze out the water, then mix with the mince and pepper paste. Wet topping means soggy base.
  3. 3Roll each ball out until you can nearly see through it. Thinner than feels sensible.
  4. 4Spread the topping right to the edge, thinly.
  5. 5Hottest oven you have, on a preheated tray, 6–8 minutes.
  6. 6Parsley, a hard squeeze of lemon, roll it up and eat it with your hands.
