That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make lemon rice

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

The proper tempering

15 minutes · serves 2 · Easy

What you need

  • 400g cooked rice, cold
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • A handful of peanuts
  • 10 curry leaves
  • 1/2 tsp turmeric
  • 1 lemon

What you do

  1. 1Heat the oil and add the mustard seeds. Wait for them to pop — they will, all at once.
  2. 2Add the urad dal and peanuts and fry until both are gold, then the curry leaves, which will spit.
  3. 3Turmeric in, off the heat, then the rice, broken up with your fingers first.
  4. 4Salt, then the juice of the whole lemon, and stir until every grain is yellow.
