That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make lomo saltado

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

In a very hot wok

30 minutes ยท serves 3 ยท Easy

What you need

  • 500g beef sirloin, in thick strips
  • 3 tbsp soy sauce
  • 3 tbsp red wine vinegar
  • 1 red onion, in thick wedges
  • 2 tomatoes, in wedges
  • 1 yellow chilli, sliced
  • 600g chips, freshly fried
  • Coriander
  • Rice, to serve

What you do

  1. 1Season the beef and get a wok or heavy pan as hot as it will go with a little oil.
  2. 2Sear the beef in two batches, 90 seconds each, and lift it out. It should still be pink.
  3. 3Onion in, 1 minute โ€” it must stay crunchy. Then the chilli and tomato for 30 seconds.
  4. 4Beef back in with the soy and vinegar. It will steam violently. Toss for 20 seconds.
  5. 5Tip the hot chips in, toss twice, coriander over. Serve with rice as well as the chips, which is the point of the dish.
