How to make lu rou fan

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Belly, chopped not minced

90 minutes Β· serves 4 Β· Easy

What you need

  • 600g pork belly, skin on, in small dice
  • 4 shallots, sliced
  • 4 tbsp soy sauce
  • 1 tbsp dark soy
  • 2 tbsp rock sugar
  • 1 star anise
  • 1 tsp five spice
  • White pepper
  • Rice, to serve

What you do

  1. 1Fry the shallots in a little oil until deep brown and crisp, then lift most of them out.
  2. 2Render the pork in the same pan over medium heat until the fat runs and the edges catch.
  3. 3Both soys, the sugar, the spices and 400ml water. Bring up, then down to the barest simmer.
  4. 4An hour and a quarter, lid ajar, until it is glossy and thick enough to coat a spoon.
  5. 5Over hot rice, with the crisp shallots scattered back on. Pickled cucumber if you have it.
