That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make mac and cheese

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Proper roux, baked

40 minutes · serves 4 · Medium

What you need

  • 400g macaroni
  • 50g butter
  • 50g flour
  • 600ml milk
  • 250g strong cheddar, grated
  • 1 tsp mustard powder
  • Breadcrumbs

What you do

  1. 1Boil the pasta two minutes short of the packet time. It cooks again later.
  2. 2Melt butter, stir in flour, cook 2 minutes — it should smell biscuity, not raw.
  3. 3Add milk a splash at a time, whisking, until you have a smooth pourable sauce.
  4. 4Off the heat, stir in most of the cheese and the mustard powder. Season hard; pasta dulls it.
  5. 5Fold through the pasta, top with the rest of the cheese and breadcrumbs, bake 20 minutes at 200C.

Stovetop, fifteen minutes

15 minutes · serves 2 · Easy

What you need

  • 200g macaroni
  • 150ml evaporated milk
  • 150g cheddar, grated
  • 1 tsp cornflour
  • Mustard
  • Pepper

What you do

  1. 1Cook the pasta, drain, and return to the warm pan off the heat.
  2. 2Beat the egg into the evaporated milk with a spoon of mustard.
  3. 3Pour over the pasta and stir hard — the residual heat thickens it.
  4. 4Add cheese in handfuls, stirring until glossy. Do not put it back on the heat or it splits.
