That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make oyster omelette

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

O a jian

20 minutes Β· serves 2 Β· Medium

What you need

  • 12 small oysters, shucked
  • 3 eggs
  • 3 tbsp sweet potato starch
  • 5 tbsp water
  • 2 handfuls of chrysanthemum greens or lettuce
  • 2 spring onions
  • 3 tbsp ketchup
  • 1 tbsp chilli sauce
  • 1 tsp sugar
  • 1 tbsp soy sauce

What you do

  1. 1Whisk the starch into the water until it is like thin cream. This, not the egg, is what makes it stretchy.
  2. 2Get a pan properly hot with a good film of oil. Lay in the oysters for 30 seconds.
  3. 3Pour the starch slurry over and let it set into a translucent sheet, 2 minutes.
  4. 4Beat the eggs and pour them over the top, then pile on the greens and spring onion.
  5. 5Flip in halves β€” it will not come away cleanly and that is fine. Another minute.
  6. 6Mix the sauce ingredients and pour over. Eat with a spoon.

Without oysters

  • Sweet potato starch
  • Water
  • Lettuce
  • Spring onion
  • Ketchup
  • Chilli sauce

What you do

  1. 1Same method, no oysters. Still gluey, still good, no longer the dish.
  2. 2A few prawns are a closer swap than nothing.
