That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make pabellón criollo

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Four stripes

150 minutes · serves 4 · Medium

What you need

  • 800g beef flank
  • 1 onion
  • 1 red pepper
  • 4 garlic cloves
  • 2 tbsp tomato purée
  • 1 tsp cumin
  • 400g black beans, cooked
  • 300g rice
  • 2 ripe plantains
  • Oil

What you do

  1. 1Simmer the flank with half the onion for 90 minutes until it pulls apart. Keep the broth.
  2. 2Shred the beef along the grain into long threads.
  3. 3Fry the rest of the onion, the pepper and garlic, add the tomato purée and cumin, then the beef and a ladle of broth. Reduce until barely wet.
  4. 4Warm the black beans with a little of the same sofrito.
  5. 5Fry the plantain slices until very dark and sweet.
  6. 6Four stripes on the plate: rice, beans, beef, plantain. Do not mix them before serving.

With tinned beans and quick beef

40 minutes · serves 3 · Easy

What you need

  • Beef skirt
  • Onion
  • Pepper
  • Tomato purée
  • Tinned black beans
  • Rice
  • Plantain

What you do

  1. 1Sear and slice the skirt thin instead of shredding flank.
  2. 2Everything else the same, and the plantain still has to be nearly black.
