That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make pastel de nata

One way to do it. The same ones the app hands you once you have decided.

Burnt on top on purpose

60 minutes · serves 12 · Hard

What you need

  • 1 roll puff pastry
  • 250ml milk
  • 200g sugar
  • 100ml water
  • 25g flour
  • 6 egg yolks
  • 1 cinnamon stick
  • 1 lemon peel

What you do

  1. 1Roll the pastry into a tight log, cut discs, and press each one out from the middle with your thumbs. The spiral is what makes the layers stand up.
  2. 2Boil the sugar and water to 100C with cinnamon and lemon peel.
  3. 3Whisk flour into cold milk, then pour the hot syrup in slowly while whisking.
  4. 4Off the heat, whisk in the yolks. Never let it boil after this or it scrambles.
  5. 5Fill the cases only three-quarters full.
  6. 6The hottest your oven will go, 250C or more, for 12 minutes. The black blisters on top are correct.
