That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make patacones

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Fried twice

25 minutes Β· serves 3 Β· Easy

What you need

  • 3 green plantains
  • Oil for frying
  • Salt
  • Garlic water β€” 2 crushed cloves in 200ml warm water

What you do

  1. 1Peel the plantains by scoring the skin lengthways and prising it off. They do not peel like bananas.
  2. 2Cut into 3cm chunks and fry at 160C for 4 minutes, until soft but barely coloured. Lift out.
  3. 3Squash each one flat between two plates or with the bottom of a glass.
  4. 4Dip briefly in the garlic water, then fry again at 190C for 3 minutes until crisp and gold.
  5. 5Salt immediately, while they are still shining.

Air fryer

30 minutes Β· serves 3 Β· Very easy

What you need

  • 3 green plantains
  • 3 tbsp oil
  • Salt

What you do

  1. 1Chunk and toss in oil, air fry at 180C for 10 minutes.
  2. 2Squash flat, oil again, back in at 200C for 8 minutes.
  3. 3Salt at once. Less rich, still good.
