How to make salep

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Thick and hot

12 minutes · serves 2 · Very easy

What you need

  • 500ml whole milk
  • 2 tsp salep powder
  • 2 tbsp sugar
  • Cinnamon

What you do

  1. 1Whisk the salep powder into the COLD milk before any heat goes near it. Add it to hot milk and it lumps instantly and permanently.
  2. 2Bring up slowly, whisking constantly, with the sugar.
  3. 3It thickens suddenly at about 8 minutes, to the weight of thin custard.
  4. 4Into cups, cinnamon dusted heavily over the top.
