That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make spaetzle

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Scraped, then fried

30 minutes · serves 4 · Medium

What you need

  • 300g plain flour
  • 4 eggs
  • 150ml milk
  • 1/2 tsp nutmeg
  • 60g butter
  • 150g grated cheese
  • 2 onions

What you do

  1. 1Beat the flour, eggs, milk, nutmeg and salt hard with a spoon for 3 minutes, until the batter blisters and falls in ribbons. Beating is what gives it the chew.
  2. 2Rest 15 minutes.
  3. 3Press through a spaetzle press, or scrape thin strips off a wet board, straight into boiling salted water.
  4. 4They are done 30 seconds after they float. Lift out with a slotted spoon into cold water, then drain.
  5. 5Fry in butter until the edges catch, with fried onions and cheese folded through at the end.
