Tacos de nopales

Cactus paddles, griddled, with lime and far too much coriander.

That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make tacos de nopales

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Griddled

25 minutes ยท serves 3 ยท Easy

What you need

  • 4 nopales paddles, or a jar, rinsed well
  • 1 onion, sliced
  • 2 tomatoes
  • Corn tortillas
  • Coriander
  • Lime
  • Chilli

What you do

  1. 1If fresh, scrape off the spines with a knife and slice into strips. Rinse them until the water is no longer slippery โ€” this matters.
  2. 2Dry-griddle the nopales hard until they squeak and take colour, 8 minutes. Do not crowd the pan.
  3. 3Add the onion and tomato and cook until soft.
  4. 4Warm the tortillas directly on the flame, fill, and finish with coriander, lime and chilli.
