A rice triangle grilled until the outside crackles.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make yaki onigiri

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Grilled in a pan

15 minutes Β· serves 2 Β· Very easy

What you need

  • 400g cooked short grain rice, warm
  • 2 tbsp soy sauce
  • 1 tsp mirin
  • 1 tsp sesame oil

What you do

  1. 1Wet your hands, salt them, and press the rice into four firm triangles. Firm is the whole trick β€” loose ones fall apart in the pan.
  2. 2Dry-fry them in a non-stick pan over medium heat for 4 minutes a side, until a pale crust forms.
  3. 3Mix the soy, mirin and sesame oil and brush it on. Back in the pan 1 minute a side until it catches and smells toasted.

With a filling

20 minutes Β· serves 2 Β· Easy

What you need

  • 400g cooked rice
  • Pickled plum or miso
  • Soy sauce
  • Nori

What you do

  1. 1Flatten a handful of rice, put the filling in the middle, close it over and shape.
  2. 2Grill as above and wrap a strip of nori round the bottom at the end.
