Youtiao and soy milk

A long fried stick of dough, torn and dunked into warm soy milk.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make youtiao and soy milk

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Fried from scratch

90 minutes Β· serves 4 Β· Hard

What you need

  • 300g plain flour
  • 1.5 tsp baking powder
  • 0.5 tsp bicarbonate of soda
  • 1 tsp salt
  • 180ml water
  • 1 tbsp oil
  • Oil for deep frying
  • 1 litre unsweetened soy milk
  • Sugar or soy sauce, to season

What you do

  1. 1Mix everything into a very soft, sticky dough. Do not knead it much. Oil the top, cover, and rest it in the fridge for at least 4 hours β€” overnight is better.
  2. 2Turn it out onto a floured board and press into a long rectangle. Cut into strips a finger wide.
  3. 3Stack pairs of strips and press a chopstick down the middle to join them.
  4. 4Stretch each pair long and lower into oil at 190C. They puff almost at once β€” keep turning so they colour evenly.
  5. 5Warm the soy milk. Sweet, or savoury with a splash of soy and vinegar, which is the better one.
  6. 6Tear the sticks and dunk.

Shop-bought, warmed

10 minutes Β· serves 2 Β· Very easy

  • Sugar

What you do

  1. 1Oven at 200C for 6 minutes, or air fryer for 4, until crisp again.
