A dense slice that defeats most people.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make cheesecake

One way to do it. The same ones the app hands you once you have decided.

Baked vanilla, no cracks

90 minutes · serves 10 · Medium

What you need

  • 250g digestive biscuits
  • 100g melted butter
  • 900g cream cheese, room temperature
  • 200g sugar
  • 3 eggs
  • 200ml soured cream
  • Vanilla

What you do

  1. 1Crush the biscuits, mix with butter, press hard into the tin and chill.
  2. 2Beat the cheese and sugar on LOW. Air is what cracks a cheesecake.
  3. 3Add eggs one at a time, barely combining, then soured cream and vanilla.
  4. 4Bake at 160C in a water bath for 55 minutes. The centre should still wobble.
  5. 5Oven off, door ajar, leave an hour. Then fridge overnight. It cannot be rushed.
