Flan

Baked custard turned out under its own caramel, wobbling.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make flan

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Baked in a water bath

90 minutes · serves 8 · Medium

What you need

  • 200g sugar, for the caramel
  • 3 tbsp water
  • 500ml whole milk
  • 1 tin condensed milk
  • 4 eggs
  • 2 egg yolks
  • 1 tsp vanilla

What you do

  1. 1Melt the sugar with the water in a dry pan without stirring until it is deep amber. Pour it straight into the mould and swirl.
  2. 2Warm the milk. Whisk the eggs, yolks, condensed milk and vanilla, then pour the warm milk in slowly while whisking.
  3. 3Strain it. Twice. This is what makes the texture.
  4. 4Pour over the set caramel, cover with foil, and bake at 160C in a tin of boiling water for 50 minutes.
  5. 5It should still wobble in the middle. Chill overnight — not four hours, overnight.
  6. 6Run a knife round and turn it out. The caramel becomes the sauce.
