That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make kelewele

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Ginger and chilli

25 minutes Β· serves 4 Β· Very easy

What you need

  • 3 very ripe plantains
  • 1 thumb ginger, grated
  • 1 tsp cayenne
  • 0.5 tsp aniseed or fennel, crushed
  • 1 tsp salt
  • 2 tbsp water
  • Oil for frying
  • Roasted peanuts

What you do

  1. 1The plantains must be properly black-skinned. Yellow ones will not work.
  2. 2Cube them and toss with the ginger, cayenne, aniseed, salt and water. Leave 10 minutes.
  3. 3Fry in 2cm of oil at 175C, in batches, for 3 minutes until dark at the edges.
  4. 4Drain on paper and salt again while hot.
  5. 5Peanuts alongside. Best eaten out of a paper bag.

Air fried

25 minutes Β· serves 3 Β· Very easy

What you need

  • Ripe plantains
  • Ginger
  • Cayenne
  • Oil spray

What you do

  1. 1Same spicing, sprayed well with oil.
  2. 2200C for 14 minutes, shaking twice. Less good and much less oil.
