That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make steak frites

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Chips twice-fried

60 minutes Β· serves 2 Β· Medium

What you need

  • 2 sirloin steaks, thick
  • 800g floury potatoes
  • Oil for frying
  • 60g butter
  • 2 garlic cloves
  • Thyme
  • Salt

What you do

  1. 1Cut the chips, rinse off the starch, and dry them completely. Fry at 140C for 8 minutes until soft and pale, then drain and cool.
  2. 2Salt the steaks and leave them out of the fridge 30 minutes.
  3. 3Smoking hot pan, no oil in it, steak in. Three minutes a side for medium rare on a thick one, turning once.
  4. 4Butter, garlic and thyme into the pan for the last minute, spooned over the steak again and again.
  5. 5Rest the steak 5 minutes while the chips go back into 190C oil for 3 minutes to crisp. Salt them the second they come out.
