That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make tarte tatin

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Turned out, fingers crossed

70 minutes · serves 6 · Medium

What you need

  • 6 firm apples
  • 120g caster sugar
  • 80g butter
  • 1 sheet puff pastry
  • Pinch of salt

What you do

  1. 1Peel, halve and core the apples and leave them uncovered for an hour if you can — drier apples give a firmer tart.
  2. 2Melt the sugar in an ovenproof pan until it is a proper amber caramel, then whisk in the butter and salt off the heat.
  3. 3Pack the apple halves in tightly, cut side up, curved side down. They shrink, so tighter than feels right.
  4. 4Cook on the hob 15 minutes so they start to soften and take on the caramel.
  5. 5Pastry over the top, edges tucked down inside, and bake at 200C for 30 minutes. Rest 5 minutes only, then turn out — leave it longer and the caramel glues it in.
