That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make tres leches cake

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Soaked overnight

60 minutes · serves 10 · Medium

What you need

  • 5 eggs, separated
  • 200g caster sugar
  • 150g plain flour
  • 1 tsp baking powder
  • 1 tin evaporated milk
  • 1 tin condensed milk
  • 250ml double cream
  • 1 tsp vanilla
  • 300ml cream for the top

What you do

  1. 1Whisk the yolks with two thirds of the sugar until pale and thick, fold in the flour and baking powder.
  2. 2Whisk the whites to soft peaks with the rest of the sugar and fold them in gently. This is a sponge with no fat in it, on purpose — fat would stop it drinking the milk.
  3. 3Bake at 180C for 25 minutes, then cool completely in the tin.
  4. 4Poke it all over with a skewer and pour the three mixed milks over slowly, in stages, letting each soak in.
  5. 5Cover and refrigerate overnight. It will look drowned and it will not be. Whipped cream on top before serving.
