That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make welsh rarebit

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

The proper paste

20 minutes Β· serves 2 Β· Easy

What you need

  • 200g mature cheddar, grated
  • 25g butter
  • 25g plain flour
  • 100ml dark beer
  • 1 tbsp Worcestershire sauce
  • 2 tsp English mustard
  • 1 egg yolk
  • Black pepper
  • 4 thick slices bread

What you do

  1. 1Melt the butter, stir in the flour and cook 1 minute, then whisk in the beer until smooth and thick.
  2. 2Cheese in off the heat, a handful at a time, then the mustard, Worcestershire and pepper.
  3. 3Beat in the yolk last. Cool it until it is spreadable β€” this is the difference between rarebit and cheese on toast.
  4. 4Toast the bread on one side only, under the grill.
  5. 5Spread the paste thickly right to the edges on the untoasted side.
  6. 6Back under the hottest grill until it blisters and goes brown in patches.

Buck rarebit

25 minutes Β· serves 2 Β· Easy

What you need

  • Same paste
  • Bread
  • 2 eggs

What you do

  1. 1Same rarebit, with a poached egg on top of each.
  2. 2That is the whole difference and it is worth the name change.
